I’m a Wisconsin girl, which really means a few things: I hate cold weather, I’m not a Packer fan and I absolutely cannot live without dairy. I won’t talk about the first two but I will talk about dairy for a minute. In my opinion there are 3 food groups: cheese, sour cream and ice cream. Mark my words, I’m making a new food pyramid! In all honesty, I could not live without dairy. And perhaps this is a little TMI but I have a bit of an allergy to dairy. Which is unfortunate because it keeps me from eating a lot of foods that I really enjoy. BUT I have found a way to make my favorite Creamy Garlic and Herb Dip in a way that I can enjoy it using lactose-free dairy products from Green Valley Organics.
I’m going to be honest, when Green Valley Organics sent over a box full of lactose-free products I was a little skeptical but I was open to trying them. The verdict: they taste like normal dairy products! But let’s roll it back for a second and talk about what lactose is and what it means to have a lactose intolerance. Lactose is a naturally occurring sugar in milk which requires lactase enzymes to break down in the body. People, like myself, who do not produce enough of these enzymes in the body cannot digest lactose properly. If you’re interested you can read more information on lactose intolerance here.
So let’s get back to the dip! One of my guilty pleasures is potato chips and dip, which I understand is a pretty unhealthy snack. But everything in moderation, right? This dip is quick and easy to make and perfect for a last minute snack or appetizer. If you use fresh thyme and robust garlic you’ll end up with a simply irresistible dip that is perfect for break, crackers or fresh vegetables. Or chips, in my case. This dip is sure to please your party guests or your family.
If you’re like me and you suffer from a bit of a lactose intolerance I would highly recommend trying one of the many products from Green Valley Organics. They offer a full line of organic dairy products including cream cheese, butter and yogurt. You can locate where you find their products in your area right here.
