Happy Monday! I’m sure everyone got their fill of football championship games this weekend and you’re now gearing up for the big game in a just a couple of weeks. I’m going to let you in on a little secret…I really don’t like football. I know, stop the music. I just have never really gotten into the sport. I do, however, enjoy the Super Bowl. Yes, it’s because of the commercials but also because of the delicious food! I decided to devote this entire week to football recipes to serve at your Super Bowl party.
I’m starting today with a staple: chili. Not just any chili. Chili with beer. Not just any beer. Guinness. You’re welcome.
Cook the onion, garlic and ground beef in a large stock pot and drain. Add in the Guinness and simmer for 10 minutes. This will allow the flavor to seep into the meat.
Drain the tomatoes and add them into the pot along with the tomato paste, spice, salt and cayenne packets from the boxed chili mix. Stir well and continue to simmer for 15 minutes. Just before serving, drain and rinse the chili beans and add them into the pot. Simmer for an additional 10 minutes and serve with your favorite chili toppings.
