Do you have moments in your life where you just don’t feel like you can take on another project? Like you’re life is just SO busy that you don’t even think you have enough time to eat a decent meal? Yah, that is totally me lately. Between trips to Pittsburgh, California and now Chicago my life has been crazy insane lately. I’m hoping that my upcoming trip to France in just TWO WEEKS will allow me to relax and recharge a bit. In the mean time I’ve been trying to find ways to make my life easier with meals made ahead of time much like these Feta and Herb Egg Sandwiches.
Now that the cooler morning temperatures are setting in here in Wisconsin I find myself turning from my standard breakfast of yogurt and fruit to warming breakfasts like toast and oatmeal. I really feel like my day starts out stronger when I fill my stomach with wholesome goodness. These breakfast sandwiches are quick and easy to prepare on Sunday and you can wrap them up and heat them on throughout the week. I also love that they are handheld so I can sit at my desk checking my email and eat at the same time. Multi-task. My ultimate recommendation.
