Happy Birthday to me! It’s a big tradition in my office to bring in birthday treats and when word got out that I cook/bake, the pressure was on to find the most delicious treat that I could. I stumbled upon this recipe for Iced Lemon Pound Cake a while back and thought it would be a great time to try it out. I LOVE the lemon pound cake they offer at Starbucks and this recipe claimed to taste the same so I figured I would give it a shot. The recipe is super quick and easy to make and would be great if you need a dessert in a pinch.
Preheat the oven to 350° and grease 2 loaf pans generously.
Pour all cake ingredients, in no particular order, into your mixer fitted with a paddle attachment. Beat until well combined.
Divide the batter amongst the 2 pans and spread out evenly. Bake for 45-55 minutes until pick inserted into the middle comes out clean. Remove from the oven once finished and allow to cool for 15 minutes before removing the loaves from the pans.
To make the icing, combine the powdered sugar and lemon juice in a bowl. Slowly add in the lemon juice and mix until it becomes a drizzly texture. Drizzle the icing over the loaves and allow to sit for 15 minutes to harden. You can also serve the cake while the icing is still wet. Enjoy!
