I am a huge fan of cocktailing…responsibly of course. There’s nothing better than a glass of sangria on a summer night while watching the sun set.
One of the new brands that I discovered while at BlogHer Food in Miami was Cascade Ice. I’m normally a water drinker but these beverages are a great replacement for a summer thirst quencher. I love that they are guilt-free, sugar free and come in 31 flavors.
They sent me a variety box of flavors and I instantly gravitated towards the Pineapple Coconut. I LOVE tropical flavors and anything with coconut. I wanted to turn this low-calorie drink into a low-calorie cocktail so I enlisted the help of my blender and a bottle of rum. You’re probably all thinking I’m a total alcoholic by now, but seriously, I don’t drink that much. BUT there is just something about a beautiful summer day that COULD call for a cocktail.
I love the slush consistency of this drink and garnishing them with a variety of fruit skewers can make them look even more appealing. My friends over at Cascade Ice wanted my readers to try out these drinks as well so I’m offering up a full case (24 bottles) of Cascade Ice to 1 lucky winner today!

- 1 bottle Cascade Ice Pineapple Coconut
- 1 cup ice cubes
- 2 ounces dark rum
- Fruit to garnish
- Place the Cascade Ice, ice cubes and rum into a blender and pulse until the ice is chopped thoroughly.
- Divide the drink into two glasses and garnish with fruit.
