I thought that the best way to wrap up my tropical/Hawaiian week here on the blog would be with a tropical cocktail. I’m not typically a fruity drink kind of gal but this is one of my favorites to enjoy on a hot summer day on my patio. My love for Mai Tai’s started on my trip to Barbados last year where I ordered this drink regularly poolside. Now when I have them I have to just imagine someone other than myself mixed them up and I’m sitting poolside in the Caribbean sun. But no doubt, this is the best Mai Tai cocktail recipe around and you’ll want to mix up a batch this weekend.
There are a lot of variations of the Mai Tai but I’m a firm believer that the best base for all of them is a good rum. My favorite is Mount Gay XO which I was able to taste while at their distillery in Barbados. But if you have another favorite then you can use that too. My other requirement is fun straws to sip them from because honestly, everyone loves a fun straw. Last summer I picked up some fun flamingo straws at World Market.
If you’re really sick of winter you can whip up a batch of Instant Pot Kalua Pork this weekend with a side of Hawaiian Macaroni Salad and serve it with these delicious Mai Tai’s. Why just sit around dreaming of summer when you can actually start living it?!
