I can’t necessarily say that I’ve been anxious for snow but it finally arrived yesterday in Milwaukee. I’m not a fan of the cold or the snow but I do enjoy a white Christmas. Just a light dusting. Unfortunately I think this snow will be dirty and melty by next week. As I nervously drove my new car for the first time through the snow yesterday on my way home I was thinking about all of the holiday baking that I wanted to do but didn’t get around to. Where did this month go?! And 1 week until Christmas?! Geez!
I do have a little treat for you today if you’re looking for a last minute appetizer for your holiday party. I’m featuring a local vendor today called Oro di Oliva from around the Milwaukee area. They have cute little shops that feature a variety of vinegars and olive oils in unique flavors. I’m brushing the crostini with their Tuscan Herb blend of olive oil and drizzling their 18 year balsamic on top as a glaze. Talk about flavorful! Preheat your broiler to high heat. Dice the tomatoes, removing the seeds, and place them in a bowl. Roughly chop the olives and add them into the bowl along with 1 tablespoon of olive oil, basil, balsamic vinegar, and salt and pepper to taste. Set this aside to marinate.
Brush the top of each slice of bread with olive oil and them sprinkle with salt and pepper. Place the bread slices into the broiler to toast. Remove the bread from the oven and spread with the mascarpone. Return the bread to the oven for 1-2 additional minutes to warm. Remove the bread from the oven and plate, sprinkling the top of each piece of bread with some of the tomato mixture. Sprinkle with additional salt and pepper then serve. It’s quick, simple and delicious!
