I decided that I’m going to continue with the theme of exotic recipes this week and bring you a tasty recipe for Dairy-Free Creamy Coconut Lentil Curry. Curry is a flavor that I have been really feeling lately and this dish is no different. It is perfect for a Meatless Monday extravaganza or to make ahead of time and divide up for weekday lunches. The flavor is rich and delicious and you can make it as spicy or mild as you want.
