Here’s a quick little recipe that makes a great, complete meal: Orzo with Chicken and Asiago. As usual, I made a few alterations to the printed recipe to bring the flavor more on board with my palate. This also made for great leftovers.
I started by seasoning the chicken breast with salt and pepper and then grilling it. While that’s happening you can prepare the orzo.
Bring the water and chicken broth to a boil in a medium-size saucepan. Once boiling, add in the orzo and bring back to a boil. Reduce heat and simmer for around 12 minutes. Remove from the heat.
Here’s where you’re going to stir in the asparagus, cheese, salt, herbs and pepper. Cover the pan and let it sit for around 5-8 minutes to let the asparagus cook slightly. I then removed my finished chicken breast from the grill and chopped it into small pieces, adding it to the pot.
Serve the dish with a sprinkle of asiago and enjoy!
