Since I’m leaving my home for a new land in about 6 weeks, I’ve been doing everything that I can to enjoy my American summer before I jet off to France. I have been attending all of the local festivals, grilling every chance that I can get, relaxing (when I can) on my patio and next week will be hosting some friends from California and showing them a really good Milwaukee time! Also important right now are quick and delicious meals because I don’t have much time for anything else! I whipped up these delicious Smoky Chipotle Chicken Sandwiches recently for the Living Litehouse blog and they are the perfect summer meal!
Barbecue chicken is one of my favorite summer meals. Paired with homegrown corn on the cob and a delicious salad, it reminds me of being a kid! I decided to spice things up a bit with this version using chipotle chilis in adobo sauce, and if you’ve never used these before you are certainly missing out. If you want to add a bit of spicy smoky flavor to anything, this is the ingredient for you! If you only like a little bit of spice I would advise stripping the seeds from the peppers before use.
