Whoever said that home ownership was a part of ‘living the dream’ I’d like to talk to them and have them explain to me what kind of dream that they were having. I raked leaves from my front and back yards all weekend and I’m sure I’ll be out there again before fall is over. And now my back is sore. And my thumb. Definitely not ‘living the dream’ over here in Wisconsin! I did, however, top off my raking this weekend with a delicious Fall Harvest Salad packed with local ingredients and fall favorites!
I try to eat locally grown produce as much as possible and shop as many farmer’s markets as I can during the summer months. I know that there are fall and winter markets as well but I’m always excited when I can shop local at my grocery store. BrightFarms is a producer that believes in local produce so they grow their salad greens as close to their distribution partners as possible. The result: I get the freshest base for all of my tasty salad creations!
With fall in mind I decided to create a salad packed with fall flavors like green and red apples, pecans, dried cranberries, feta cheese and BrightFarms spring mix. Then I topped it all off with an apple cider vinaigrette. I honestly could not stop eating this salad and even packed it for lunch today topped with freshly grilled chicken. You’re going to fall (no pun intended) in love with this salad.

- 4 cups BrightFarms spring mix
- 1 Granny Smith apple, diced
- 1 Honeycrisp apple, diced
- ½ cup pecan halves and pieces
- ⅓ cup feta cheese crumbles
- ⅓ cup dried cranberries
- ¼ cup red onion, sliced
- ¼ cup olive oil
- ¼ cup apple cider vinegar
- ¼ cup honey
- ¼ tsp sea salt
- ¼ tsp pepper
- Toss together salad ingredients in a large bowl.
- In a small container with a lid, combine olive oil, apple cider vinegar, honey, salt and pepper. Shake to blend.
- Drizzle dressing over salad to your liking, toss to coat. Divide salad between 2 bowls and serve immediately.
