One of the things that I find exciting about living in a foreign country are my visits to the grocery store. Don’t get me wrong, there are also frustrations. It took me over a month to figure out where they kept the breadcrumbs at my grocery store. On the flip side I really find it fun to see all of the different food items and try to understand what the labels say. One of the other items that I have not seen in France is kale. Seriously! They love their mesclun greens here and their arugula but I have not seen kale. Which is unfortunate because I have really been craving this Mandarin Pomegranate Chopped Kale Salad since I got here!
I created this salad in partnership with my friends at Litehouse Foods using their Poppyseed dressing and Feta Cheese Crumbles. I love the combination of the slightly sweet dressing and the salty cheese mixed with other fruit and nuts on the salad. I know I wouldn’t be able to find the dressing anyway here in France but lucky for those of you living in America you should be able to find it at your local grocery store!
This salad is great as a side dish or a main course. You could also try adding some sliced grilled chicken to dress it up a bit and make it a complete meal. All I know is that if you try this recipe just once you’ll be wanting more!
