Today I have a very special post for you as I’m teaming up with a great organization called Produce for Kids. While I don’t have children of my own I can appreciate their commitment to educating families on the benefits of healthy eating. In addition to this, they help inspire parents and children to create nutritious and delicious meals as a family.
This year is the 12th annual Get Healthy, Give Hope Campaign where Produce for Kids teams up with local children’s charities and regional supermarkets to help support the cause. My local chain, Roundy’s, has teamed up with the organization. Other local supermarkets include Publix, Stop & Shop, Meijer and many more.
This is the first year that Roundy’s has teamed up with Produce for Kids and they are supporting the Salad Bars to Schools charity. This organization does just that, they bring salad bars into schools to make sure that every child across the nation has access to fresh fruits and vegetables.
To help celebrate the campaign this year I whipped up some homemade hummus to serve with fresh vegetables! I think eating fresh vegetables daily is important but can also be a daunting task for children. Pairing these vegetables with a quick and easy hummus adds to the flavor and health benefits of the veggies.

- 2 cups fully cooked chickpeas
- 3 tablespoons extra-virgin olive oil
- 3 tablespoons tahini
- 1½ tablespoons lemon juice
- 1 small clove of garlic, roughly chopped
- 1 teaspoon salt
- ½ teaspoon finely ground black pepper
- Combine all of the ingredients in a food processor and blend until smooth.
- Remove the lid, scrape down the sides and continue to blend for 5-6 pulses.
- Taste test the hummus and adjust the flavors as needed.
