Hooray for Friday! I feel like this week has gone on forever. Not to mention we had a ‘casual day’ at work yesterday due to the inclement Wisconsin weather, which made it feel like a Friday. So really it feels like today should be Saturday. If that makes sense. Moving on…
I wanted to talk today about kitchen essentials. The #1 essential that I think every kitchen should have is a KitchenAid Stand Mixer. I begged and pleaded for one for a long time and finally got one last Christmas, and then my blog was born! (See how amazing that thing is?) It makes life so much easier and I’m pretty sure that it will last forever. I didn’t think anything could replace this #1 essential until I received this amazing KitchenAid Hand Blender. Now I already had a basic one of these but my new one is pretty much amazing. It also came with an entire ‘tool box’ which I think is equivalent to how a guy feels about his actual tool box. This thing blends, whisks AND chops. Okay, now I feel like I’m on an infomercial here. I guess my point is, while my stand mixer may always be my #1 love, this new hand blender is a close second. And if you had one you could make this delicious tomato soup I’m about to introduce you to.
Melt the butter in a large stock pot and add in the onion and celery. Cook for about 5 minutes until the vegetables are soft. Add in the basil and cloves and cook for an additional minute and sprinkle on the flour. Continue to cook for 2 additional minutes and then add in the stock, baking soda and tomatoes. Bring the heat down to low and simmer for 10 minutes.
Remove the pot from the heat. Using your KitchenAid Hand Mixer, gently puree the tomatoes and stock until smooth. Return the pan to the heat and slowly stir in the milk. Add in additional milk if the soup appears to be too thick. Add in the tomato paste, salt and pepper and stir until well combined. Serve the soup garnished with fresh basil and sour cream or additional cream.
