The weather outside is certainly getting a bit more chilly here in Wisconsin and today I pulled my fall jacket for the first time. I even have made soup 3-4 times in the past week to get in the mood for cooler temperatures. I posted a recipe on Facebook yesterday that I made recently for dinner and today I’m talking about the Tuscan White Bean and Kale Soup that I made for the Living Litehouse blog!
I’m such a fan of soup because you can make large batches and portion them out to eat throughout the week. It is such an easy lunch option and you can load it with as many vegetables as you want and add in beans or meat to your liking. Today’s recipe is 100% vegetarian and adds in cannellini beans for protein. And did I mention how quickly you can make a batch? You can go from chopping to eating in 30 minutes. Perfect, right?
