I am just so excited that Christmas is only a little over a week away! I love the idea of getting together with friends and family around the holiday season and entertaining. I don’t mean juggling for guests, I mean putting out a gorgeous display of food and cocktails for everyone to enjoy. I won’t be hosting anyone at my home this year for Christmas but I will be bringing appetizers to other gatherings. I’m all about a delicious cheese board, mixed nuts, fruit and honey. But my all time favorite appetizer are Baked Brie Bites which could not be any easier to prepare!
When you’re preparing a cheese and appetizer board just keep in mind that presentation is everything! You want things to be easy to grab in single portions and a variety of sweet and savory options. I love a good mix of cheeses, grapes and apples, almonds and dark chocolate. One of my favorite news ways to display this beautiful arrangement is on my Driftwood Serving Boards from JK Adams. Since I’m all about baked brie, but find an entire baked brie wheel hard to serve, I decided to come up with Baked Brie Bites for easy snacking. They are a simple appetizer of puff pastry, brie, fig jam and pecans. I love how the melted cheese brings together all of these flavors in one bite. If you have a round cookie cutter you can cut the bites into circles with that, otherwise cutting the sheet of puff pastry into squares will work as well.

- 1 package frozen puff pastry, thawed (2 sheets)
- 1 small wheel brie cheese, cut into bite sized pieces
- โ cup chopped pecans
- 1 tbsp. butter
- 2 tbsp. brown sugar
- โ cup fig jam
- Preheat oven to 375ยฐ. On a clean surface, roll out puff pastry dough lightly. Using a round cookie cutter, cut out circles out of the dough and divide them between two baking sheets. Bake for 10-12 minutes, until puffed up and slightly golden.
- Meanwhile, in a saute pan over medium heat, add butter or oil and stir in pecans. Add brown sugar and a pinch of salt and stir, allowing to toast for about 3 minutes. Pull the tarts out of the oven and let them cool slightly. (Note: some of them may get very puffed up; that is fine. Just push them down a bit when you are putting the other ingredients on top.)
- Top each tart with apricot preserve, followed by a small spoonful of the pecan mixture, and finally a piece of brie. Put back in the oven for another 3 minutes until cheese is melted. Serve immediately.

I love a good charcuterie platter. I could eat it all day long.

Our family likes to keep it simple with really good cheeses and crackers, sushi and hummus with veggies. On special occasions I’ll make a hot dip. I have a recipe for a pizza dip that’s yummy.

I love a mix of cheese, dried fruits, nuts and olives. Although if someone showed up to a party with a hot melty cheese dip I would not pass it up.
Two are my famous cheese straws..no southern pastry is complete with out these..also stuffed sausage mushroom caps and crab sherry dip…so many yummy apps.

These baked brie bites will be on our holiday menu for Christmas.
We generally will have cheese, crackers, an assortment of raw veggies, and sometimes some cream cheese rangoons. If we are going to cook anything, I want these baked brie bites.

I love bringing a spicy jam/jelly, like pepper jelly or a fruit jelly with a little horseradish mixed in, and pouring it over a block of cream cheese. I serve it with some crackers or pita chips.
