If you’re like most people that garden you probably have a counter top full of tomatoes right now. I don’t have a garden this year but I have many friends that do and have been pawning off their tomato abundance on me! I don’t really mind because I love a good tomato. And seriously, this is the best time of the year to enjoy them. Aside from endless caprese salads (which I also enjoy) I was trying to come up with other delicious fresh tomato recipes. And then a star was born: Fresh Tomato Feta Tart.
This tart is super quick and easy to make and features a world of delicious flavors. It’s the perfect weekend party appetizer or even great for an evening snack or meal. If you only have red tomatoes that’s fine but I really think using a variety of colorful tomatoes it what really makes this appetizer a masterpiece!
