So life has been a bit hectic lately and I’m sure that will continue throughout this month. Unfortunately last week I didn’t have much time to plan out my week in terms of meals prior to heading to the grocery store so I was scrambling all week for dinner.
A couple of things…I’m not a fan of adding sugar to foods so I omitted that ingredient. I also diced up some onion and red pepper that I had in my fridge and added that to the meat as it browned.
So I browned the meat and drained the fat. Then you add in the picante sauce, water, cumin and salt. Bring this mixture to a simmer and cook for about 5 minutes to let the sauce thicken. While this is happening….
Heat the potatoes as the instructions say. Remove your mixture from the heat and spoon the mashed potatoes over the top. Sprinkle with the cheese and then cover to allow for the cheese to melt. This was seriously a really fast meal to prepare and the flavor was great. I used the garlic Simply Potatoes for extra flavor.
So I have to ask, what’s your favorite Irish meal? (Despite this not really being Irish)
