Moving on… I’ve got soup for you today! Healthy soup! I’m pulling this recipe today from Skinny Taste, which is a healthy cooking blog that I follow. The simmer time on this soup bring the beef to a fall-apart stage and the flavors from the vegetables in the broth make it a great fall lunch or dinner. The best part, only 336 calories in 1 serving and far less sodium than any canned soup you’ll find.
Heat a large pot over medium heat and then add in your oil and beef. Season the meat with a little bit of salt and then brown for a couple of minutes. Add in the carrots, celery, garlic and onion and cook for an additional minute. Now add in the water, salt and bay leaves and bring to a boil. Once your pot comes to a boil, reduce the heat to low and then cover and simmer for 1.5-2 hours. This is where your meat will become tender.
After cooking the soup for 1.5-2 hours, add in the barley and cook for an additional 30 minutes. Remove the bay leaves and adjust the salt to taste. Serve with some fresh ground pepper and a sprinkle of parsley.
