One of my favorite recipes taken from my grandma’s cookbook is that of her meatballs. I remember as a kid going to her house every Sunday for lunch and it would usually be meatballs with ravioli or gnocchi.ย While this isn’t the healthiest of recipes I figured I would share it with everyone because it is so delicious!
Ok, I know what you’re thinking. Raisins?! YES. These add moisture to your meatballs. I put the raisins in a food processor with a little bit of water and grind them up really, really good.
Put all of the ingredients into a bowl, adding only 3 eggs to start. Mix well with your hands (yes, it’s messy) and add a fourth egg if you feel it is too dry.ย I’ve found that browning these in the oven is the least messy so I form my meatballs to the size of my liking and then set them on a cookie sheet. Once the meatballs brown and seem firm enough, I put them into my sauce to simmer and finish cooking. I wouldn’t leave them to cook for more than an hour, otherwise you’re going to end up with a mushy meat sauce. And there you have it!
It’s important to note that as part of the process it generally becomes the boyfriends job to mix all the ingredients together ๐
