Is it really grilling season? This unseasonable weather we have been having has been wonderful! Who would have thought that we’d be rolling out the grills and shorts in the middle of March. We took the opportunity to celebrate the weather this weekend with a cookout on Sunday and made one of my favorite burger recipes. This is a Cooking Light recipe, which if you do it right, actually ends up low-fat. I cheated a little bit on the slaw just to save time. I guarantee you’ll love the Chipotle Barbecue Burgers with Slaw…the perfect combo of flavors and just a little bit of spice make this one delish summer staple.
Combine the first 6 ingredients in a bowl and mix until they are blended.
Divide the mixture into 4 equal parts and form the patties. The recipe calls for making these burgers on a grill pan but since the weather was so perfect, we opted for the good ol’ charcoal grill to add flavor.
If you’re actually going to keep the recipe ‘light’ you can combine the ingredients for the slaw (coleslaw – black pepper) to create the lighter slaw. I just bought a small container of creamy coleslaw from the grocery store. Once the burgers came off the grill, I topped them with the slaw and enjoyed!
A few notes: The chipotle peppers can add a little bit of spice to the burger. If you like a spicier meal, add a few more minced peppers to the meat mixture.
I slowly add the breadcrumbs to avoid the mixture from getting too dry. If that happens, mix up another egg and add part of it to the mixture.
