One of my weekly go-to recipes is the Chipotle Sloppy Joe one that I found on Cooking Light. I really love a good sloppy joe on a cheap bun and this is a good way to cut calories and sodium found in the canned sauce.
When using such a low fat ground meat such as sirloin, you’ll need a bit of oil to avoid it sticking to the pan. Start by spraying your pan and adding the onion to saute. After the onion begins to cook, I add in the ground beef and brown. There shouldn’t be much fat in the pan but you can drain the meat if you’d like. Once your meat and onions and cooked, add in the bell pepper, tomato paste, salt, cumin and tomato sauce. I don’t always have canned chipotle chiles in my house so I tend to substitute them out for Chipotle Chile Powder. This stuff is spicy so you’ve got to watch it, but I add enough in just to give it a little kick and some smoky flavor.
Once your ingredients are all mixed and heated, spoon onto your buns and serve. I like to serve them with a side of bread and butter pickles and my new favorite chip, Pop Chips. This makes for a flavorful and low calorie dinner!
Sounds like a great sandwich. I’ve seen the pop chips but haven’t tried them yet.
