Moving on…I’m always on the hunt for flavorful, low-calorie dishes that I can pack for my lunch. This week I’m trying out the Tex-Mex Rice Bowl found on CookingLight.com. I really love the burrito bowls from Chipotle so this seemed like a good idea. I think you could also wrap this up in a tortilla for a nice taco as well. This is super quick and easy!
I browned the ground beef and drained off the little bit of fat that was in the pan. Add in the water and taco seasoning and then bring to a simmer.
Add in the corn and beans and cook until heated; about 1 minute. Stir in the rice.
Top with the pico de gallo and jalapeño. Sprinkle with cilantro and serve.
