Today I’m starting your morning off right. I’m bringing you comfort food today and even better, I’m bringing you a giveaway. I’ve been on a chicken sausage kick lately. Why? Because it contains less fat and is equally delicious. You may have seen my use of al fresco Chicken Sausage last week and today I’m bringing you another chicken sausage recipe and a delicious giveaway to try al fresco sausage. But first you’ll have to suffer through me talking about this delicious comfort dish: biscuits & gravy. And if the pictures are making you drool, imagine how delicious it tastes.
Let’s start with some delicious buttermilk biscuits. Preheat oven to 425°. Whisk together the flour, salt, baking powder, baking soda and sugar in a large bowl. Using your fingertips, place the chopped and chilled butter in the bowl along with the flour and gently work the butter into the flour. Crumble the butter enough to create a course meal. Add in the buttermilk and stir until evenly moistened. Using a 1/4 cup measuring cup, evenly spoon the biscuit dough onto a baking sheet, spacing the biscuits 2 inches apart. Bake for 15 minutes until the biscuits are golden brown on top.
While the biscuits are baking you can prepare the gravy. This will make a rather large batch of gravy so if you would prefer not to have leftovers you can cut the recipe in half. Melt the butter in a medium saucepan and stir in the flour. Cook until the mixture becomes a pale yellow, about 2 minutes. Gradually whisk in the milk and bring to a boil. Reduce the heat to medium and continue to cook until it thickens, about 10 minutes. Season with coarsely ground pepper and salt.
The sausages are already precooked so you’ll want to merely warm them up in a skillet before plating 2 per plate. Place 1 biscuit on top of each piece of sausage and generously smother with the gravy. Sprinkle with additional black pepper and enjoy!
