So here’s a funny story…
About 8 months ago my fiance and I were at Costco and when I came across an economy sized bag of chia seeds. I’ve heard a lot about the health benefits of chia seeds so of course I wanted to try them. My fiance asked me about 5 times if I would actually eat the bag of seeds, to which I replied with confidence, yes.
Fast forward 8 months and the bag of seeds are still in my pantry. Yup. This happens often.
But now I’ve found a way to enjoy the chia seeds! And I actually do really enjoy them in my yogurt. Chia seeds are a great source of antioxidants, protein and fiber. So go ahead and buy yourself a 10 pound bag because they’re really good for you.
I take yogurt to work for breakfast so making these parfaits in small mason jars is perfect for me. I make them at the start of my week and just grab them in the morning when I’m heading out the door. I like that you get some crunch from the pistachios and chia and then bursts of fruit from the pomegranate seeds. You’re going to love these.
- ¼ cup pomegranate juice
- 2 tablespoons chia seeds
- 1 cup Greek yogurt
- 2 tablespoons shelled pistachios, chopped
- 2 tablespoons pomegranate seeds
- Whisk together pomegranate juice and chia seeds in a small bowl; refrigerate overnight.
- Layer chia mixture with yogurt, and top with pistachios and pomegranate seeds.
