I made a banana cream pie last weekend to bring to a Labor Day party…but that’s a whole other story. I had so many bananas lying around the house that you would have thought a gorilla lived there. Speaking of which, have you ever peeled a banana upside down like a gorilla does? Seriously, so much easier than the ‘normal’ way. Anyway, I had a lot of bananas so why not make bread.
Preheat the oven to 325° and butter 2 loaf pans. Cream together the butter and sugar in a large mixing bowl or your KitchenAid until light, pale and fluffy. Add in the eggs 1 at a time and continue to mix.
Mash up the bananas in a separate bowl with a fork and then add in the milk and cinnamon. In yet another bowl, combine the flour, baking powder, baking soda and salt. Add the banana mixture into the creamed butter and blend completely. Now add in the flour mixture all at once and mix just under the flour disappears. Stir in the nuts by hand.
Divide the batter between the two pans and bake for 60 minutes, until a pick inserted into the center comes out clean. Set aside on a cooling rack for 15 minutes before removing the bread from the pan and slicing. Serve with butter or honey.
