I just wanted to quickly extend a nice, warm welcome back from the long weekend. I had troubles dragging myself out of bed this morning and the darker mornings are not helping. What will help is a nice slice of this zucchini bread to go along with my coffee this morning. It’s about that time when the crops are coming to fruition and most people will have zucchini coming out of their ears. This is a great use for that. You can choose if you want nuts or no nuts, but either way this is a great bread!
Start by preheating your oven to 350°. In a large bowl, combine flour, salt, nutmeg, baking soda, cinnamon and sugar and blend together well. In a separate bowl, combine oil, eggs, water, zucchini and lemon juice. Mix the wet ingredients into dry, add nuts (if desired) and fold in. Bake in 2 standard loaf pans, sprayed with nonstick spray, for 1 hour, or until a tester comes out clean. I sprinkled the tops of my loaves with a little bit of sugar before putting them in the oven. This is great served warm with a little bit of butter.
