Pineapple Glazed Pork Tenderloin

It’s quite rare that I’ll make pork but when I do, I like it sweet.  One thing that always comes to mind when it comes to pork and fruit for me is The Brady Bunch. Anyone? Anyone? Alright, moving on.

This pork features a delicious pineapple and jalapeno glaze for a spicy/sweet finish. And to really add to this flavor I’ve included the Pineapple Wholly Salsa to really enhance the sweetness. In their words this dish will make you ‘set sail to a tropical paradise in your mouth.’ Oh, and did I mention that there’s a Wholly Guacamole giveaway today? Preheat your grill to 500°. Bring 3/4 cup of the pineapple juice along with the sugar to a boil in a medium saucepan. Stir until the sugar dissolves and then reduce the heat to low and cover. Continue to simmer for approximately 10 minutes until the glaze turns a medium brown color.  Remove from the heat and stir in the remaining pineapple juice, jalapenos and allspice. This will give it a bit of a Jamaican flair.  When the bubbling stops, pour in the lime juice and salt. Reserve 1/4 cup of the glaze for topping the pork before serving.

Make sure that your pork tenderloins are about room temperature before grilling to receive accurate cooking results. Salt and pepper the tenderloin, place on the heated grill and brush with the glaze.  Continue to grill the tenderloin and brush with the glaze until the internal temperature reaches 145°. Remove the pork from the grill and allow it to rest for 5-7 minutes before slicing and serving. Top each plate with a serving of Pineapple Wholly Salsa for a sweet and savory taste.

    This recipe looks awesome! I always love combing the flavor combination of ham and pineapple on sandwiches so I am sure this would be just as fabulous 🙂 My favorite topping for chips is definitely fresh salsa and avocado chunks!
