Another week and another weekend has passed here in the French Riviera and it certainly is starting to feel more like home here. The weather is still warm enough to enjoy an afternoon at the beach but elements of fall are starting to set in during the morning and evening hours. I’ve spent my years since college in the hustle and bustle of adult life learning and growing and working hard to get to where I’m at in life. I never really imagined that I’d be taking a little life-break so early in my life but it certainly has been a welcome one. Back home things were starting to feel so mundane and I was on a path to craziness if I didn’t decide to switch things up. I’m definitely glad that I had the opportunity to take advantage of this adventure.
I have a very quick trip back to the US planned at the end of this month and I’ve been making my list of things that I’d like to enjoy while I’m back in the states. On the list are tacos, a delicious burger, maybe some BBQ and bringing back a few products that I can’t find in France. I’m sure it will feel nice to stroll around a Target and see familiar brands but I can’t help but feel like I’m going to miss my slower lifestyle that I’ve begun to grow accustomed to here in Europe.
We started to plan our next steps once our time in the riviera comes to a close and the excitement of our next adventure is setting in quickly. First, we’ll be flying to Prague for a short time to explore the Christmas markets and then heading to Austria and Venice before settling down in Florence for a longer period of time. While I’m sure I won’t be able to find a lot of the things that I’ve been missing from home in any of these areas, I’m very much looking forward to eating all of the pasta that I can find while in Italy!
Speaking of pasta, today I’m sharing a quick and easy pasta salad recipe that I made in collaboration with my friends over at Litehouse Foods before I left the states. This delicious Parmesan Caesar Tortellini Salad recipe is great as a dinner side or perfect to bring as a dish to pass to an upcoming party. If you have 15 minutes then you have just enough time to prepare this dish!
That’s enough rambling for me today! Head on over to the Living Litehouse blog and grab the recipe for this Parmesan Caesar Tortellini Salad to try this week!
