I feel like I’m a bit late to the March Madness party but being fashionably late is totally acceptable in my book! While I keep up with the news over here in Europe I don’t find myself being as plugged in as I was living back in America. Not to mention my mind is slightly sidetracked by the adventures of living abroad! Either way, with the tournament winding down (or perhaps heating up) there is never a bad time to introduce a new buffalo chicken recipe to try as we approach the championship!
I worked on these Buffalo Chicken & Bacon Ranch Sliders before leaving for Europe last fall and as I brought them out of hiding on my computer my mouth started to drool just a bit thinking about how delicious they had turned out! Perhaps I could make them over here, the only think I’d have to find is a ranch dressing like the ones that I enjoy back home from Litehouse. The dressing selection is quick slim over here in Europe and I certainly have not seen any refrigerated dressings here.
These little sliders are super easy to create and are definitely a crowd pleaser. The key: rotisserie chicken. It makes everything easier! And more flavorful. I used the Pain Au Lait rolls found at Trader Joe’s for a nice brioche texture. If you can’t find these you can certainly use any other small rolls for the recipe.
