With my excitement over celebrating Taco Tuesday every week you can only image how excited I am over celebrating Cinco de Mayo tomorrow! Not to mention it is supposed to be beautiful weather in my neck of the woods and I plan to spend my afternoon on my patio with the biggest bowl of guacamole you have ever seen. And a margarita. I also plan to whip up a batch of these delicious and smoky chicken tinga tacos that I recently made for the Living Litehouse blog. Sound hard? They really couldn’t be any easier to make!
I know that the Kentucky Derby is also tomorrow but I’m confident that these Chicken Tinga Tacos also go well with a good Mint Julep. I used shredded rotisserie chicken for these tacos which cut my cook-time in half. It also adds an extra level of flavor and ensures that you’ll end up with tender chicken. The sauce is quick and easy to make and only requires a quick sauté of just a few ingredients followed by a trip to the blender and a quick simmer.
