Do you ever find yourself starting your week looking forward to meals planned later in the week? I’ve been meal-planning more and more lately so I know what’s to come throughout the week and then I find myself looking at my schedule wishing it were that day so that I can have that meal. Well this week for Taco Tuesday I have Chicken Avocado Cilantro Burrito Bowls planned and I’m already thinking about how much I can’t wait for dinner tomorrow. Maybe it’s just me, but just typing it out has me drooling. I think once I talk more about what goes into these bowls you’ll be drooling too.
I love a good burrito bowl loaded with fresh salsa, grilled chicken and guacamole. I made these bowls for the Living Litehouse blog and have not been able to get them out of my head since then! I grilled up some juicy chicken and made fresh pico de gallo for these bowls. I made a small batch of guacamole and a black bean and corn salsa to tie everything together. The topper is a drizzle of their OPA Avocado Cilantro Greek Yogurt Dressing to really make the flavors POP!
