It’s a little crazy to think that this year is almost finished and we are entering in to the holiday season. I’ll be honest, I’m not too upset as the holiday season brings a lot of joy to my life. Since moving away from my family, things are going to be a little more quiet in my house for Thanksgiving and my husband and I have been debating if a turkey is way too much food for 2 people. The simple answer is NO, but if you’re concerned about the same thing you might try this recipe for Cider-Brined Roast Chicken and Fall Vegetables instead of cooking an entire turkey.
Brining is a great way to lock in flavor and create a juicy piece of meat. This cider-brined chicken is really easy to make, it just requires a bit of time for the brining process.
