This is my first post of 2020 and so far it has been a good start to a new year. I’ve been focused on eating healthier and getting back into shape after the holiday season. Is anyone else in this same boat? I have been focused on eating clean, healthy recipes loaded with fresh ingredients and cutting out sugars. Believe me, I had plenty of cookies, cakes and treats over the holiday season to hold me over for a while! This Baked Falafel Salad Bowl has been my go-to lunch meal in the past couple of weeks and I love how fresh and delicious it tastes.
Have you ever tried falafel? While living in Europe I found myself eating a lot of falafel because it seems to be quite popular. I had never made it at home but I found that it is quite easy to prepare. The best part about this recipe is that the falafel is baked, keeping the calories and fat on the low end. You can easily prepare a batch of the falafel at the start of the week and reheat it for your salads during the week.
The tabbouleh salad is the other component to this dish that really brings everything together. Tabbouleh is really simple to make and is great on its own! You can find bulgur in most grocery stores in the ethnic food section. It looks like a bag of tiny bits of noodles.
