I’ll just start off by saying that life has been busy for the last week but I think I’ve got a good stretch of calm now to work on some fall cooking. I spent the weekend in NYC, which is one of my favorite places. I’ve been there enough to know my way around the city and have ‘favorites’. I ate well, the weather was perfect and I’ll have some photos for you later this week. In the mean time, here’s a recipe for a marinade that is sure to jazz up your chicken this week.
Combine the balsamic vinegar, olive oil, soy sauce, brown sugar and pepper in a food processor. With the blade running, add in the rosemary and garlic and process until smooth. If you want to spice it up a little you can add in red pepper flakes. I used the marinade with chicken breasts overnight to add a great flavor and the tang of the balsamic. This makes a good amount of marinade so if you need less for 1-2 chicken breasts you can cut the recipe in half.
