Caribbean Beans and Rice

As the cooler fall temperatures set in I find myself thinking more and more about delicious comfort foods. You may have seen this past weekend on Facebook that I was cooking up some delicious soup in my kitchen. That’s one thing that I definitely miss during the summer months but I’m happy to be back to my kitchen with a list of delicious recipes in mind. In addition to soups, stews and chili I also really like comfort foods like beans and rice. This has always been one of my favorite dishes and one of my guilty pleasures is still a delicious box-brand of Red Beans & Rice (don’t judge). I decided to put a little twist on the classic red beans and rice and used turmeric and cumin in the recipe. The results were delicious! My Caribbean Beans and Rice are the perfect side dish, main course or stuffing for burritos.

Have you ever owned a rice cooker? I grew up in a house that always had a rice cooker so naturally I’ve always owned one myself. It’s one of those kitchen gadgets that you don’t think you’ll ever use but it seriously comes in handy! My current rice cooker was really wearing out so I was super excited when my friends over at Hamilton Beach sent me their 4-20 Cup Rice and Hot Cereal Cooker recently. This thing really puts my tiny old cooker to shame. This rice cooker cooks rice perfectly ever time and switches over to ‘warm’ after the rice is ready to go. I also love that it has a vegetable steaming basket and you can program the cooker to begin cooking later in the day before you get home from work. There are so many delicious meals that you can make easily in a rice cooker. Think of it as a slow cooker with added benefits!

Ingredients
  • 2 cups basmati rice
  • 1 15 oz can red beans, drained
  • 1 14 oz can chopped tomatoes
  • 6 garlic cloves, chopped
  • 2 tablespoons olive oil
  • 2 teaspoons turmeric powder
  • 2 teaspoons thyme
  • 2 teaspoons cumin powder
  • 1½ teaspoons salt
  • 4 cups hot water
Instructions
  1. In a small skillet add the garlic and oil and cook for 1 minute until fragrant.
  2. Add all of the ingredients to the rice cooker and press the 'white rice' option on your rice cooker.
  3. Serve immediately.

    I do have one here, was my sons, don’t use it as it’s an older model and I just usually cook rice on the stovetop for just the two of us. This looks like a really nice one!

    I own a small, single function rice cooker that I’ve had since the 80s… The aluminum is scratched, but it still makes rice. I think it’s time for an UPGRADE, though!
