Given that it was 50 degrees in Milwaukee yesterday it’s hard to believe that winter is right around the corner. And so it Christmas. And with Christmas comes my annual 12 Days of Christmas campaign where I bring you 12 delicious recipes AND 12 awesome giveaways from some of my favorite brands. Stay tuned for that.
With winter comes my ultimate craving: tomato soup and grilled cheese sandwiches. This combination has been one of my favorite winter meals for a very long time but I decided that today I would bring you a more grown up version with tasty pesto biscuits. This soup and biscuits are very easy to make and surely will warm your soul this winter!

I love this post because I was able to keep it warm with the soup in the oven until I was ready to serve and it kept the soup warm while on the table waiting for my family to take seconds.

- For the soup:
- 1 tablespoon olive oil
- 1 yellow onion, chopped
- 4 cloves garlic, minced
- ¼ cup dry red wine
- 7 cups chicken stock
- 2 cans (14.5 oz) diced Italian Tomatoes with Juice
- 6 ounces tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ¼ cup heavy whipping cream
- salt and pepper to taste
- For the biscuits:
- 2 cups all purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- ⅓ cup shortening
- ¼ cup basil pesto
- ¾ cup buttermilk
- For the soup: In a large soup pot over medium heat, warm oil. Add in the onion and garlic and sautรฉ until tender, about 5 minutes. Add wine and stir for 1 minute. Add remaining ingredients and simmer, uncovered for 30 minutes. If you want a smoother soup you can use a blender puree the ingredients. Stir in heavy whipping cream just before serving.
- For the biscuits: Preheat the oven to 450 degrees F. In a bowl, combine the dry ingredients. With 2 knives or a pastry blender cut the shortening and pesto into the dry ingredients until crumbs form. Add in the buttermilk all at once and stir with a fork until the dough leaves the side of the bowl and forms a ball. On a lightly floured surface kneed the dough 10 to 12 times. Roll or pat dough ½" thick and cut with a floured 2½" biscuit cutter. Place biscuits 1" apart on an ungreased baking sheet and bake until golden, about 10 minutes.
